Liquid Nitrogen Ice Cream!

Vanilla Ice Cream: Instructions;
 250mL skimmed milk
 150ml 20% fat milk cream (Chantilly)
 75 grams sugar (50cc)
 2 egg yolks
 3ml (1 small teaspoon) vanilla essence (the real stuff; not the bacteria-made stuff)
 A very small amount of salt
Blend these together until a homogeneous liquid results.
Place the blended ingredients in a glass bowl and add between 750 - 1000mL of liquid nitrogen slowly while constantly stirring with a wooden spoon until the desired consistency has been achieved. Do not add any more liquid nitrogen then or the ice cream will solidify completely. If the ice cream melts just add more LN2 until it returns to a creamy consistency.  
Condensed Milk Ice Cream: Instructions;
 300mL of skimmed milk
 150mL of 35% fat milk cream (Chantilly)
 150ml of condensed milk*
 80 grams sugar (25cc)
 2 egg yolk
 3ml Vanilla essence
 A very small amount of salt 
Blend these together until a homogeneous liquid results.
Place the blended ingredients in a glass bowl and add between 750 - 1000mL of liquid nitrogen slowly while constantly stirring with a wooden spoon until the desired consistency has been achieved. Do not add any more liquid nitrogen then or the ice cream will solidify completely. If the ice cream melts just add more LN2 until it returns to a creamy consistency.
 * Note: The condensed milk referred to in this recipe contains lactose and sugar.
 

 Add nuts, fruits, etc... to taste.
